Did you know that cooking carrots is better for you than eating raw carrots? Cooking carrots releases the hidden pockets of good-for-you beta-carotene. In fact, eating carrots raw only gives you three per cent of this substance, but when you heat them up, they release closer to forty per cent!
If you don't have axcess to a root cellar, store carrots (whole unpeeled or already cut) in a container, large jar, or sealable bag full of fresh water. Maintain: Change out the water about every 4-5 days as it becomes murky and dirty. Once submerged, carrots remain extra crispy and crunchy for up to 4 weeks in the fridge.
